Apple Herb Hasselback Butternut Squash
These beautiful orange and sweet squashes deserve to be celebrated. Especially this time of year when we are getting into holiday cooking. This recipe will help you present a beautiful and naturally flavorful dish that you can add to your table spread and impress your guests!
Ingredients
1 large butternut squash
2 red apples (gala, Fuji, honeycrisp all work beautifully)
Fresh thyme or rosemary sprigs
Salt and ground pepper
Olive oil
Directions
1) Preheat oven to 425°F
2) Core and thinly slice the apples.
3) Halve squash lengthwise and scoop out seeds with a large spoon. Using a peeler, remove skin.
4) Create a hasselback on the squash by making slices across each half but not cutting all the way through. You can use a chopstick or skewer on each side of the squash to stop your cuts if that helps. These cuts will be just enough to insert slices of apple into slices but the squash halves will stay together. (If the neck of your squash is narrow you can add apple to the bulb only to prevent splitting)
5) Place both halves face down on an oiled baking sheet. Drizzle the squash with olive oil and season liberally with salt and pepper. If you like a kick you can add a touch of cayenne too! Arrange the fresh herbs on the tray for beautiful aromatics and bake for 35-40 minutes or until a fork meets no resistance.
